Go to Settings → Invoice & Document Settings and look for What every bill starts with. It has two fields: Terms and conditions, which is printed on a new bill unless you change it on that bill, and Payment terms (for example, "Payment within 30 days"), which says how long a customer normally gets to pay.
Save the changes with the save bar at the bottom. If a customer has their own credit days set, those apply for that customer; the default payment terms are used for a bill left without a due date. You need the settings permission on your Billing profile to edit these fields.
