Deleted notes go to Trash, listed in the left sidebar, and stay there for a limited period before they are removed for good. The Trash page shows how many days that is for your workspace; the standard period is 30 days.
Open Trash, click the note, and use the Restore button in the banner at the top of the note. It returns to your notes list. If you use Empty Trash or delete a note forever from Trash, it cannot be restored, so check the list before confirming.
