Open the note and click the i (info) button above it. The info panel has a Tags field where you can type a tag, with or without the # — #gst and gst give the same tag.
Tags are not case-sensitive, so "GST" and "gst" are one tag. A note can carry many tags, and adding one does not move the note anywhere. Every tag you use appears in the sidebar, and clicking it brings back the notes that carry it. Search also has a Tag filter.
